The Gundersens work with a Wake County contract roaster
who sources beans from international organic farms in Hon-
duras, Guatemala and Ecuador and other countries to sell to
start-ups like Seth and Angela’s. They work with small pro-
ducers and small farms to source traceable, direct-trade coffee.

“We sit down with him and get to tailor the coffee to what we
like, creating our own blends. We do a quality-control cup-
ping process to the tailor the taste to what we like and desire
to sell,” said Seth.

Erwin Mills Coffee Co. currently sells Erwin Mills Double
Stack, their signature medium roast; Erwin Mills Triple Stack,
a dark roast; and Erwin Mills Decaf, a light roast. Each is sold
in whole bean form for a consistent smooth and flavor-filled
cup. They recommend grinding what you need each day and
not in bulk to get the best quality each time.
